冰糖葫芦
材料:山楂,竹签,绵白糖,清水。
做法:
1、将山楂洗净晾干,去蒂。
2、将山楂对半切开,用刀尖把核挖出去。
3、用竹签将山楂穿起来,可在山楂上里夹入豆沙、花生仁,核桃仁等,做花样冰糖葫芦。
4、喜欢吃带核的冰糖葫芦的话,可以省略2、3步,直接把山楂用竹签串起,家里的锅子都小,不要穿的太多。
5、绵白糖和水一起倒入锅中(清水是糖量的一半即可),开中火煮。轻轻搅拌至冰糖融化,待冰糖都融入水中后,转小火慢慢熬。千万不要频繁搅动哦!
6、熬至糖液呈琥珀色,状态浓稠,有拉丝的感觉,这时想做出不粘牙的糖葫芦重点来啦!此时用筷子蘸些糖液,迅速浸入冷水碗中,糖液会立即凝固,冷却后,用牙咬一下,如果粘牙,需继续加热。如果不粘牙,咯嘣咯嘣有吃水果糖的感觉,证明火候恰到好处。
7、熬糖至这个色泽就刚刚好啦!
8、糖熬好后,将串好的山楂贴着熬好的热糖上泛起的泡沫轻轻转动,裹上薄而均匀的一层。
7、把裹好糖的冰糖葫芦拿出放在抹上食用植物油的板子上晾凉,等糖完全凝固就做好啦!
做好的糖葫芦晶莹剔透,红艳诱人!
不过最后剩下的糖太少,没办法继续往糖葫芦上蘸可怎么办?
把剩下的糖熬到特别浓,就可以拉丝啦!
左手拿勺子,舀一勺糖稀,右手拿糖葫芦蘸一点糖稀拉丝了手捻动糖葫芦的签子,一会就把糖葫芦裹上“黄金甲”了,糖硬了就加热,然后再等待时机,继续拉丝,这样做出来的裹糖丝的糖葫芦,宛如镀了一层琉璃,颜值不要太高!
当然,为了方便制作的话,还可以用牙签穿成迷你糖葫芦,不过蘸糖是一定要小心别烫手!
除了山楂,用山药豆或者其他各种水果做出来的糖葫芦也很好吃哦!
